Poznote 6.31.0

🎉 New rootless image variant

Poznote now ships an official rootless image that runs entirely as an unprivileged user (uid/gid 1000) instead of root, for Kubernetes restricted PodSecurityStandard, rootless Podman, and other environments that forbid root inside containers. Huge thanks to @aaronkyriesenbach for this contribution (#1136)!

New tags on ghcr.io: poznote:6.31.0-rootless, poznote:6-rootless and the floating poznote:rootless (multi-arch, amd64 + arm64)
New Rootless install method in the README, and a migration guide for existing instances
Nothing changes for existing users: the default image is strictly identical, rootless is 100% opt-in
